Thank You, Abby

You probably know by now - I had a wonderful visit with Abby last week. She does amazing things with a camera, that girl. Thanks, Abby, for bringing your camera along, for both of your generous posts this week, and for the gorgeous print that you had in hand when you stopped by for breakfast. It's making me anxious for Spring.


Thanks, too, to Emily of Paper Turtle, whose post about baked eggs provided the inspiration for our meal. I can't believe I'd never baked eggs before (and I can't believe how many times I've done it since - how many eggs in one week is too many?).

Suzy,

You probably don't remember the Eggs in a Basket recipe. Made about 180 of them for a Mother/Daughter Breakfast years ago when you were still in grade school.

3 pkgs. frozen patty shells (Pepperidge Farm)
18 eggs
18 slices Canadian bacon
1 pkg. Knorr's Holladaise Sauce (prepare according
to directions on pkg.)

Bake patty shells according to pkg. directions, under bake slightly. Gently scoop out tops, being careful not to make holes in the shell. Place shells on a cookie sheet, crack egg into shell. Bake at 300 until egg is firm about 20-30 minutes. Serve on warm slice of Canadian bacon and top with Hollandaise sauce. Patty shells can be made 1 day ahead (which we did!). Eggs can be placed in shells 1 hour before baking.
